bread and butter pickles ======================== 16 cups sliced, unpeeled medium cucumbers 6 medium white onions, sliced (6 cups) 2 green peppers, sliced 1 sweet red pepper, sliced 3 cloves garlic, scored 1/3 cup pickling salt cracked ice 5 cups sugar 3 cups cider vinegar 2 tablespoons mustard seed 1 & 1/2 teaspoons celery seed 1 & 1/2 teaspoons ground turmeric Combine cucumber, onion, green and red peppers, and whole garlic cloves. Add salt; cover with cracked ice. Mix thoroughly. Let stand for 3 hours; drain well. Highly Optional? -- Discard garlic Combine remaining ingredients; pour over cucumber mixture. Bring to boiling. Fill hot, clean pint jars with vegetables and liquid, leaving 1/2 inch headspace. Adjust lids. Process in boiling water bath 5 minutes for pints. (Start timing when the water returns to boiling.) Makes 8 pints.
